Hey everyone! Come check out this recipe that I found on the Internet a while ago. It's called:
Ratatouille Pasta Salad
Preparation Time: 45 minutes
Cook Time: 30 minutes
Ready in 1 hour & 15 minutes
Serves: 8 People
Ingredients:
- 4 whole tomatoes, chopped
- 1 whole eggplant, cubed and soaked in cold water for 30 minutes
- 1 whole yellow onion chopped
- 2 whole zucchini, cubed
- 1 Tbsp. of Herbes de Provence
- 1/4 cup of extra virgin olive oil
- 1 bag whole wheat rotini pasta
- 2 cloves of garlic, chopped
- 1 container of feta cheese, crumbled
Preparation:
- Saute onion in olive oil until barely translucent.
- Add garlic and cook until garlic begins to turn slightly golden.
- Add tomatoes. zucchini, and eggplant to the onion mixture and continue to saute over medium heat until the tomatoes begin to break down and release their juices.
- All the other vegetables will become tender yet still slightly firm.
- Add Herbes de Provence (to taste) and salt and pepper (to taste).
- Remove ratatouille from heat and allow to cool to room temperature.
- Cook pasta according to package direction, shocking the pasta in cold water after cooking.
- Toss the ratatouille and pasta together in a large bowl.
- Drizzle over salad with olive oil and sprinkle feta cheese.
- Serve and enjoy!
